Meet the Team – Ros

My name is Roslyn Priestley and I am the assistant manager of 101 Limerick. I am originally from Tipperary and have over five years’ experience in hospitality. I’m proud that I have grown with 101 as I started as a waitress and moved up to the bar then onto management. I found my passion in the art of mixing drinks. I’m a creative so the bar gives me a way of expressing that.

I have been working in 101 Limerick since the first day we opened and have had the pleasure of watching it grow and expand into the superpub it is today. My favourite part of the job is training staff and watching them develop into skilled and confident mixologists over time. For the future I would love to see 101 becoming a franchise with sister bars in each of the major cities across Ireland.
